BACKGROUND

From vine to bottle, legions of microorganisms work silently to transform grapes into wine.

These invisible craftsmen, yeasts and bacteria, good or bad, play a vital role in the winemaking process, organoleptic qualities and wine stability. Each bottle of wine tells a story of collaboration between technology and nature, between man and micro-organisms.

The world is changing. Global warming, for example, is already contributing to rising PH levels and encouraging the development of contaminating yeasts.

- The transformation of practices which tend towards the reduction or even elimination of inputs and therefore increase the risk of deviations, the development of harmful microorganisms, etc.

In this context, in the same way as for physico-chemical analyses, the integration of preventive and routine microbiological analyses is a crucial factor in preventing the risks of deviation, making the right decisions, acting at the right time to ultimately ensure a high level of quality control and reduce the risks of production loss.
